Poutine: a hearty appetizer from Canada
Poutine is an extremely popular appetizer in Canada and is also offered in many fast food restaurants, while French fries are still relatively unknown here. The original recipe uses cheddar cheese curd, but since it is hard to find in Germany, grated mozzarella can be used instead. It also crunches and melts nicely if you drizzle it with brown sauce.
As for the gravy, it is important that it is flavored with Worcestershire sauce. If you want to make a vegetarian poutine, you can of course use vegetable stock instead of beef stock, but then it should be flavored more strongly. You can determine the consistency yourself: if you want the sauce to be more liquid, add a little water or broth; for a thicker version, thicken it with a little flour or starch.
Perfect poutine fries
You don’t necessarily have to make your own fries; you can also use a frozen version. However, we think that making the fries yourself is worth it! Are you wondering why potatoes are fried twice? This makes them crispy on the outside, yet soft on the inside. Whether youpeel the potatoes or not is up to you. If you like the flavor and want to save time, you can easily do it; you just need to wash them thoroughly. However, for making thick fries, it is important to use waxy potatoes.
If you want to give the poutine a touch of sophistication, you can garnish it with, for example, green onions or bacon. Poutine is certainly not a weight loss product, but every now and then we can treat ourselves to something – and this Canadian appetizer is perfect for that!

For the fries:
6 potato slices
1Liter of frying oil
Salt
For the cheese curds:
250grams of cheddar (or grated mozzarella)
For the gravy:
1 shallot
1 garlic clove
600 milliliters of beef stock
2 tsp. Worcestershire sauce
30 grams of butter
30 grams of flour
salt, pepper
preparation
- To prepare the fries, first peel the potatoes, wash them and cut them into thick slices. Then place the handles in cold water. Cut the cheddar cheese into bite-sized pieces.
- For the sauce, peel the shallots and garlic clove, chop them finely and fry them in a little oil in a large saucepan. Pour in the beef stock and Worcestershire sauce and bring the sauce to the boil.
- In a second saucepan, melt the butter, add the flour and stir to make a dressing. Stir vigorously into the simmering gravy. Season with salt and pepper and braise over low heat for about 10 minutes.
- Meanwhile, heat the frying oil in a saucepan or deep fryer to 140 degrees.
- Meanwhile, drain the water from the potato sticks and blot them with a kitchen towel. They need to be completely dry before frying them.
- Pre-fry the fries in batches in heated oil for 5 minutes. Then take them out and heat the oil to 175 degrees. When the temperature is reached, fry the fries again for 2-3 minutes until they are golden brown. Finally, lay them out on a paper towel and season with salt.
- For the poutine, place the fries on a plate, sprinkle cheese crumbles on top and drizzle with gravy.
